Chorizo Cornbread Stuffed Bell Peppers

This year I decided that I would thrust myself into competitive cooking and in doing so I entered this fine recipe into the 2016 National Cornbread Cook-Off. After about ten different ideas and a handful of trial cooks I was finally able to dial into what I believe to be a contest worthy all original recipe. Thanks to the help of a few good friends and taste testers I was able to make the March 11th deadline. Now all we have to do is wait and see my recipe will be selected from the thousands of cornbread recipes submitted!  Continue reading “Chorizo Cornbread Stuffed Bell Peppers”

Smoked Leg of Lamb

Although I was born and raised in Kentucky, I must admit that I’ve had limited culinary experiences with goat and lamb. Tender, juicy chicken, fresh slaw and a to die for crispy outer layer that will make you understand why these tacos are an ace in any occasion. So when I had the idea to combine the best of both worlds the result was probably the guiltiest of all guilty culinary pleasures. Apparently smoked pulled pork, sesame oil, ginger and crispy spring roll wraps were destined to be together all along.

Beef Brisket – The SmoFried Guide

Beef brisket can either be your best friend or your worst enemy. We’ve all heard the horror stories of several hour stalls and overcooked end products. We’ve also listened to folks in Texas revere the beef brisket as if figuring out how to perfect a whole packer is some sort of BBQ right of passage. Regardless of where you’re currently at in your brisket journey it’s fair to say that it is king when it comes to high level BBQ! Continue reading “Beef Brisket – The SmoFried Guide”

SmoFried Mac & Cheese Balls

Have you ever had something so good that you had to slap yourself mid-bite just to make sure it’s real? that’s exactly what happened when I tasted one of my best creations yet. Who would’ve known that smoked macaroni and cheese could turn out any better after you batter it up and drop it in a little oil for just a few minutes. Crispy, cheesy and satisfying are the first words that come to mind whenever I think of these all original appetizers. Continue reading “SmoFried Mac & Cheese Balls”
